Is it Too Early For Pumpkin Krunch?


I don't think so! I'm so ready for fall and the weather has been teasing us. First it's cool and fallish and then it's back to humid. Enough already! Anyway, I decided to make the first Pumpkin Krunch of the year today. It's a super easy dessert and the recipe will be at the bottom of this post. It's sort of like pumpkin pie filling with crunchy cake on top.

I decided to paint it white because I realized that it would be perfect for using the various tea towels I have. So I've just been folding a tea towel on the bottom and setting the cups and saucers etc on top of that. I love it! It gives me an opportunity to use something I collect!




I took my coffee, krunch and this book outside to relax for a bit today (had to turn the overhead fan on though).






I love the Country Living books.I haven't been disappointed in one yet! Here are a few pictures I marked that I particularly liked.

Look at how much cuteness they squeezed into that tiny dining room!


One of these days I'm going to find chairs that I can do this to!



That's such a cute centerpiece and you could use plain terra cotta pots!


Pumpkin Krunch

  • 1 large can of pumpkin
  • 1 can of evaporated milk
  • 3 eggs
  • 1 cup of sugar
  • 1/4 teaspoon of cinnamon
  • 1 box of yellow cake mix
  • 1 cup of chopped walnuts (I've also used pecans, they're optional)
  • 2 sticks of butter melted (I cut this down to 1 stick and I stir a little light olive oil into the melted butter but try it with the two first to see if you like it that way)

Grease a 13x9x2 pan (or equivalent). Blend the pumpkin,milk,eggs,sugar and cinnamon together. Pour in pan. Sprinkle the cake mix over the pumpkin mixture. Sprinkle the nuts on top of that. Spread the melted butter over the top. Bake at 350 for an hour or until the top is brown and let it sit for a few minutes. (I've been know to bake it at 400 for about a half hour when I'm in a rush and it seems to be fine but you know your oven).

of course it is not too early for a fall dessert - I think any dessert is perfect any time of the year!
And if we lived closer, I'd be right over for a dish of it.

Your tray looks so nice. With my hubby convalescing, I discovered we have some trays but they are sure not cute - but give me some spray paint and a pretty print and they will be soon.

I enjoy the cool mornings while I take my morning walk but I have to say that I'm sad to see summer go, I'm a summer gal. I have notice that the mosquitoes are really bad lately both my girls are ate up. All summer they are fine leave it to Sept and they get eaten up even with spray on.

That book looks wonderful. I just LOVE Country Living anyway so I know I would love that book. Yep, we have been teased with the weather too. Last week it was so cool and nice all week but the past couple of days has been really hot and humid with tons of mosquitos out...YUCK!

Thanks for the recipe. It is perfect! I have a large can of pumpkin that was given to me and I had no idea what to use it for (all my recipes call for one small can).

I want to try that recipe. It looks great! I'm hoping it's finally fall here too. We had a couple of lovely cool days , but hot today. Nevertheless I've spent the day playing around the house, putting away some of the summery things and cozying it up a bit. I am definitely into "no cost decorating" this year!

Question for you: I want to try your pumpkin krunch recipe this weekend. You list one large can pumpkin... I've only seen pumpkin in one size can... do you know how many ounces? Also, the evaporated milk.... a large can or small can? Thanks!

Love your tray, and tea towel. Love the teapot and cup. Great book! I also love the china cabinet. I have a wall of china and it does not show up that great. I have mostly crystal in it, but its three feet deep, I can add a lot in there! The dessert sounds wonderful! Just waiting for the pumpkins to get ready that are planted in our field.

My stepmom makes this dessert, but she calls it pumpkin pie cake. I am always tempted to just eat the entire top of it myself! So good.
