Preserving the Harvest


or good deals from the farmers market/grocery store! I grew these tomatoes. They're going bonkers in my garden and we can't eat them all now! My zucchini...not so much! I must be the only person in the world who had a problem with zucchini this year. I got two...yep...two little ones. I planted some more but they don't have anything to harvest yet.



But the farmers market had them so cheap that I bought a bunch! We love eating it roasted in the oven with some pesto. But we also like zucchini bread! So tasty and healthy! So I grated them all up. Here they are draining in a colander. Let's make some Low Fat Zucchini Bread! The recipe will be at the end.



O.K. Let's get these into the oven so we can take care of the rest of the zucchini and tomatoes! I like my muffins big so I always fill them to the top!


I scooped two cups of shredded zucchini into quart freezer bags. Really squeeze all the air out! I did two cups because that's what I use in my zucchini bread.




Be sure to put a date on them so you know how old they are when you go to use them. Now I just stick them in my chest freezer and when zucchini is out of season and we want some zucchini bread, I defrost them and use as I normally would. These four freezer bags will make 8 loaves of bread!


I was going to try canning my tomatoes this year but I just don't feel up to it this week. So I'm going to preserve them the way I always do which is cut them into quarters and freeze them (wash them first).





I just set them on cookie sheets and stick them into the freezer for a few hours. I can get two cookie sheets in this freezer and one in my fridge freezer. Then I pop them off and stick them in freezer bags. This way they don't stick together. They're individually frozen. I only cook with them. I think they're too mushy to use in a salad. I also puree them in the blender and freeze them that way in freezer bags (they lay flat so they take up less room than containers).




I also do blueberries this way. We grow our own but this year we didn't have enough to freeze. Also no blackberries and I usually am able to freeze a few bags of each. But I made lots of crisps, cobblers and slumps this summer. So when blueberries were 99 cents a pint, I bought a whole bunch and froze them same way as the tomatoes. Except I do not wash them before freezing. I rinse them off before using them and I usually use them frozen - they're a bit soft when defrosted. But they're perfect for baking and smoothies.




We're done for now! Just in time too! The muffins and bread are done! Let's have a nice sit down...oh that's the washer beeping....let me just pop the clothes into the dryer.



O.K.....Let's use one of my cute coffee pots! I didn't make this I got it at the thriftstore this way!



Mmmm....let's take the tray into the living room it's too muggy to sit outside today!


You don't actually have grow your own fruit and veg in order to preserve the harvest! Preserve someone else's harvest! Next week I'll show you what I do with my basil!



Low Fat Zucchini Bread


Pre-heat oven to 350


This recipe substitutes applesauce for the oil (I used no sugar added applesauce but it doesn't really matter). Zucchini has a lot of moisture in it so it still comes out moist without using any fat.


1 1/2 - 2 cups of sugar (I don't like it really sweet so I use the lower amount)


3 eggs


2 cups of shredded or finely diced zucchini


1 cup of applesauce (you can play with this and use half oil half applesauce if you like)


3 cups of flour (I change this all the time - sometimes I use part whole wheat flour part white, today I used white and some oatmeal, I've also used ground flaxseed)

1 teaspoon of baking soda


1/4 teaspoon of salt


1/4 teaspoon of baking powder


2 tablespoons of cinnamon


1 tablespoon of pure vanilla


Mix together all the ingredients until just blended. You can now add chocolate chips if you like, raisins, craisins, nuts etc. Then pour into loaf pans or muffin pans.I made six muffins and one loaf with this recipe.


Bake at 350 for about 60 minutes (but check it - it may take a bit more). Let it rest for a bit before cutting into it. Really...the texture will be sooo much better!

Sweet & Cheerful!



Isn't this the sweetest little tablecloth! I couldn't pass it up when I saw it at the thriftstore (I went back to see if they still had the other two white slipcovers). Can you believe I found one...just one! Where is the other one? It could be anywhere in that store! So now I have three. Sigh....




Finding this cute homemade tablecloth eased my pain somewhat! Don't you love the sweet lace edging!




What could be more cheerful than a few sunflowers?




The two are so sweet and cheerful!





Oh, and my husband finally hung my sign that I made from a fence board!



I had a root canal yesterday so it's going to take me a while to get around to everyone that left a comment on Sunday's thriftstore post. So don't think I'm ignoring you, I'm just not up to my normal energy level yet!

The Best Goodwill Day Ever!


Once again it's Rhoda's (Southern Hospitality) yardsale/thriftstore linky party! I had great shopping day on Friday. Starting with my Kroger trip where I only spend $58 and got bags and bags of groceries. I lucked into lots of food they had just marked down. 50 cent loaves of bread and such! My freezer is full! Then I stopped at Goodwill...



I was looking at the fabric section when I saw this pile of rumpled white material.



I picked one up - they're white Parson's chair slipcovers. At first I thought they were the kind that tie on but they're not!



The fit perfectly on my Ballard chair and are made just like my Ballard slipcovers only there's no tag inside! They're in really good shape. One has a teeny stain on the seat but I'm sure I can get it out.



There were four of them of them but I only took two because I only have two Parson's Chairs. But I tried one on my wooden dining room chairs and it fits perfectly. I could kick myself for not getting all four now! I could have used them on my regular chairs and kept the black check slips on the Parson's Chairs...oh well!


$3.23 a slipcover...the cheapest Ballard slip is $39!

I got this cute wire teacup filled with faux peonies maybe roses? I thought this would be perfect in my Blue Toile Guest Bedroom!

Those 2 iron bookends were from Anthropologie - $20!



That's what I paid!



They're so much prettier than the plain white bookends I was using!



The topiary I put on top of my black china cabinet. How I wish they would have had two!



The tray I'm using for an organizing project.



This little cross was just $1.21 and I added it to my cross collection in our main hallway.



I was a very happy camper Friday between the good deals I got at the grocery store and the good deals I got at Goodwill!

Displaying Plates


You all know I love plates! Generally I don't like mixing patterns or even colors. Well I like it when I see it in other people's homes but for some reason I can never get the mix right. So I never know what to do with those one or two plates that I pick up that don't fit into my usually displays.



But now I have a place to put them! I found this plate rack at TJ Maxx and knew it would be perfect in my home! I always thought I wanted one that you can hang on the wall but I really have run out of wall space so this one is perfect. It sits right on my kitchen counter!



It has a little shelf on the top where I can display cups and saucers and whatever (salt & pepper shakers?). I'm sure I'll think of other things to display on that shelf!



It also has a little place on the bottom that I thought was perfect for displaying some of my monogrammed silverware. Mmmm...you know, it probably a fancy dishdrainer!

I'm looking foward to having lots of fun with this! There's my one and only lampshade I ever re-covered!

Romantic Blue Toile Guest Bedroom


Hi everyone! I was able to work on my guestbedroom slash office slash husband's dressing room yesterday (I'm sure all of you in older smaller houses have rooms that have to function for more than one thing)!



I'm sure by now everyone knows that I love toile! So I chose a blue toile for this room. But it can't be too "precious" as my husband uses the closet in this room for his clothes and he dresses in here plus it is our guestroom and we have male and female guests.



So I didn't go over board with the toile! Here are some close-ups. All the pictures will enlarge if you click on them.




What would a bedroom be without a chamber pot? Just kidding...it is an antique chamber pot though! It makes me giggle when I look at it there - I may or may not tell guests what it is!



The brooches were gifts and I don't really wear jewelry other than earrings so one day I just decided to stick them on this lampshade. Then the other day I decided to wrap a string of pearls around the top. I really love the way it looks! Now I'm trying to think of something to do with the final!




Now this adorable crown is from my friend Rosemary Rose's Petite Maison. One of the joys of blogging has been seeing my blogger friends follow their dreams and just grow as people. I've watched Rosemary go from making things for her family to making gorgeous things that sell in shops! She really makes the most gorgeous crowns and banners and she has an Etsy shop!



The headboard is from a thriftstore, the painting on the top is a water color done by my friend Judy just for me and the "dream" work is vintage lace and fabric with fabric letters. The nightstand is from TJ Maxx and I think I got the lamp at Target.





You can see a bit of my Inspire Me board that I showed in the post below. The other side of the room is my desk and my bookcase.




I'm not finished yet! I found a little shelf at Goodwill that has a groove for plates so I think I'll put that up above my board and I need to find a bedside clock. You're never really done right!


I haven't gotten around to painting the bookcase yet because it's been so hot I can't open a window! I'm planning on painting my desk too - but it really needs to cool down before I do any of those painting projects! I have some organization projects coming up as well.
